Intoxicating love of Thailand

raft houses at Khao Sok National Park ThailandSounds, smells and especially flavours have a way of transporting us back to our travel experiences, so Katie Ellard has come up with a delicious way of reliving her Thailand trip…

“Since travelling in Thailand with Intrepid, the Khao Sok blue cocktail has been our most frequently made alcoholic drink at home. When enjoying this drink at home it reminds us of all the great friendships we made with our fellow travellers.

We have been lucky enough to have some of our group stay with us since we first met in Thailand. So while sipping on this tropical cocktail together at home, it felt as though we were all sitting back at ‘our jungle house’, talking about what we had done during the day, listening to the most amazing jungle wildlife sounds, watching the fireflies, and vowing to be fitter before attempting the walk through Khao Sok national park again!”

Katie’s Khao Sok cocktail ingredients:
1 measure white rum
2 measures Pineapple juice
0.5 measure Blue Curacao
1 measure Cream of coconut
1 slice Pineapple to decorate

Mixing instructions:
Blend white rum, blue curacao, pineapple juice and cream of coconut with about one cup of ice in an electric blender at high speed for 20-30 seconds. Pour contents into a highball glass. Decorate with the slice of pineapple and imagine you’re in tropical Thailand!
