An addictive Argentinian tradition
Ever been to a country and realised quickly that you will be planning a return trip very soon?
That was the case for Daniel Klein of The Perennial Plate. Daniel and his wife Mira have been travelling the world documenting their amazing food adventures on video and this episode shows why Argentina holds a special place in Daniel’s heart…
“Asado is the reason to go to Argentina! It’s what drew me back after my first trip, and what will probably call me again in a few years. It’s the tradition of meat, more specifically, of beef – and it’s the tradition of getting together on a Sunday and enjoying food and wine and each other’s company.
I first stumbled upon the Asado in a friend-of-a-friend’s backyard. See, just about everyone in Argentina has a barbecue. And we aren’t talking Weber grill. We are talking built into the side of their house grill with variable grill heights and stacks of cured wood!
By the time I got to the party, the wood had burned down to the embers that are so perfect for cooking, and what was placed atop them wasn’t your burger or t-bone steak – but a cornucopia of cuts. There was the blood sausage and chorizo, there were intestines and liver and ribs… a little piece of every part.
Upon returning to Argentina for our filming with Intrepid Travel, we had an even more meat-coma enduring experience. We were visiting a grassfed beef ranch (sadly much of the beef in Argentina has gone to the US feed lot model, but you can still find the good stuff if you search), and for lunch they cooked us a whole side of the cow.
Over a huge open fire, splayed out on a metal cross, the ribs of this pasture-raised animal cooked for 7 hours. When it was done, the gauchos took their knives from their belts, grabbed a piece of bread (to use as a plate) and dug in. Served with a splash of the bitter chimichurri sauce, it was Argentina and Asado in one perfect place.”
