Arrive in bustling Bangkok. Meet your new eating buddies at a group meeting before enjoying dinner in Chinatown.
Head to the Mae Glong Railway Market for a breakfast of khnom krok (rice pudding) and prepare for stalls quickly being pulled to one side when the train quite literally passes through the centre of the market. Then swap tracks for water at the Tha Kha Floating Markets. Wind through canals filled with sellers hawking their colourful fruits and wares before visiting a palm sugar factory. Travel on to Kanchanaburi, where you can choose to visit the Bridge On the River Kwai and the World War II Museum on a rickshaw tour. Tonight we dine at the night market, which is sure to get tastebuds singing.
Get ready for a hands-on masterclass in Central Thai cuisine. Start at the markets to collect ingredients for the day's menu, then whip up some classic dishes including wing beans' and banana flower cake. jungle curry. Feast on your creations for lunch.
After arriving in Ayutthaya, witness roti sai mai being made – it’s like a candy floss filled crepe but even more delicious. Then visit Ayutthaya’s famed boat noodles restaurant for a sublime Thai noodle experience. Discover the city’s historic temples in the afternoon and stock up on snacks at the night markets for tonight’s overnight train to Chiang Mai.
After freshening up at the hotel, explore Warorot Markets for tasty goodies, including sai ua (north Thai sausages) spicy noodles or, for the adventurous, bamboo worms. Head to a local khao soi restaurant for lunch and tuck into a hearty bowl of this soupy, noodley goodness. Perhaps visit Doi Suthep, a gold-gilded Buddhist temple that has incredible views, before winding back down to the city streets and getting ready for another evening of feasting Thailand style.
Wake early to offer alms to local monks before a breakfast of traditional congee. Meet Aoi, our gracious homestay host, and tour the food markets, buying ingredients for this afternoon’s cooking class. See noodles being made, and tuck into a bowl yourself for lunch, then travel to a mushroom farm to go mushroom picking. Journey on to Aoi’s home and get ready to cook up a feast – quite literally! Eleven dishes are featured on this traditional Khantohk menu, so roll up the sleeves and spend a fun afternoon learning the ins and outs of this northern Thailand cuisine. Cut, chop and sizzle the day away, then tuck into dishes like northern style laab (spicy pork salad) and gai tod (fried chicken) while listening to local musicians sing through dinner.
Wake up and enjoy a sumptuous northern Thai breakfast of fried rice, sweet sticky rice and egg custard. Farewell your hosts then head back to Chiang Mai for a tasting tour around the atmospheric Warorot Markets. There will also be time for some final shopping, eating and perhaps another massage. Enjoy your last dinner with new friends overlooking the picturesque Mae Ping River.
