These days Turkish food stands for fresh and delicious, borrowing\u00a0flavours from east and west.<\/p>\n<p>Throughout the country, different areas have their own \u2018signature\u2019 dishes, which means it can be tricky for newbies to find out where to go for what. To help you through this particularly trifling hypothetical, we picked the brains of our expert Intrepid guide in Turkey, Emir Sagir, to give us a better picture of the country&#8217;s foodstuffs. This guy knows his food, and his Turkey.<\/p>\n<p><span class=\"embed-youtube\" style=\"text-align:center; display: block;\"><iframe class=\"youtube-player\" width=\"1170\" height=\"659\" src=\"https:\/\/www.youtube.com\/embed\/MbPveh4ib7c?version=3&#038;rel=1&#038;showsearch=0&#038;showinfo=1&#038;iv_load_policy=1&#038;fs=1&#038;hl=en-US&#038;autohide=2&#038;wmode=transparent\" allowfullscreen=\"true\" style=\"border:0;\" sandbox=\"allow-scripts allow-same-origin allow-popups allow-presentation allow-popups-to-escape-sandbox\"><\/iframe><\/span><\/p>\n<h3><\/h3>\n<h2>1. Istanbul<\/h2>\n<p>As a truly intercontinental city, it\u2019s easy to find all kinds of incredible food in Istanbul. As well as the kebabs and other array of streetfoods, there are plenty of restaurants offering up both traditional Ottoman and contemporary cuisines.<\/p>\n<p>But the city does have its not-to-be-missed munchies. \u201cIstanbul\u2019s got a mixture of food,\u201d confirms Emir. \u201cAll travellers should go to Galata Bridge and get bal\u0131k-ekmek. They\u2019ll find boats cooking fish there &#8211; they cook it on the boats and make a sandwich out of it. Very tasty, very fresh, very Istanbul.\u201d<\/p>\n<p>And for kebabs, Emir says the backstreets surrounding the Spice Market are the best place to find them. According to him, the dirtier the venue looks, the better the kebabs are likely to be (within reason).<\/p>\n<p>\u201cMy favourite place in Istanbul is next to Hagia Sofia [The Blue Mosque]\u201d, continues Emir. \u201cIt\u2019s called Gafer Aga Madrasa. It\u2019s like a handicraft place but they serve tea and coffee, they have a really cool garden and there\u2019s never that many people there. Kas<\/h2>\n<p>Kas is a beautiful, quiet town on the coast. The views across the water and the nearby islands are the stuff dreams are made of. Luckily, the seafood is too. \u201cGo to a restaurant called Zeytin,\u201d urges Emir. \u201cThey do incredible calamari. Selcuk<\/h2>\n<p>The gateway to Ephesus, Selcuk is one of the best places in Turkey to get a traditional hammam (Turkish bath). It\u2019s also the best place to get Cop Sis \u2013 which translates literally to \u2018garbage kebab\u2019. It might not sound too tempting, but it\u2019s essentially skewers of lamb cooked with chunks of fat between the meat \u2013 making the whole experience extra delicious. \u201cYou\u2019ll get the best Cop Sis in Turkey from Selcuk,\u201d confirms Emir.<\/p>\n<h2>4. Fethiye<\/h2>\n<p>\u201cGo to the fish market for some of the best fish you\u2019ll ever eat,\u201d says Emir. \u201cMy favourite fish are calamari and sea bass, and you can get both in Fethiye. Cappadocia<\/h2>\n<p>Famous largely for it\u2019s rock formations and hot air ballooning industry, by Emir\u2019s estimations, Cappadocia is also the best place is Turkey to get testi kebabs \u2013 a kind of meat stew (veggie options also available) cooked in a clay pot over an open fire. \u201cGo to Dibek, on the main street,\u201d says Emir. \u201cIt\u2019s an old, fourth generation cave house. It\u2019s the best in Turkey for testi kebab.
