Most people aren\u2019t going to order them. The beers that really sell are the ones that are mild and interesting.\u201d \u00a0<\/strong><\/p>\n<p>Roberts knows a thing or two about beer (and presumably chicken, too). He\u2019s one of the head honchos at <a href=\"http:\/\/heartofdarknessbrewery.com\/\" target=\"_blank\" rel=\"noopener\">Heart of Darkness<\/a>, an independent Vietnamese craft brewery based in Ho Chi Minh City.<\/p>\n<p>This is not as weird as it sounds. <a data-wpil=\"url\" href=\"\/vietnam\" target=\"_blank\" rel=\"noopener\">Vietnam<\/a> has a longstanding reputation for beer. There\u2019s an urban legend that, when Vietnamese draft beer arrived in the late 1800s, patrons were so wild that bartenders had to protect themselves by collecting money from inside tiger cages.<\/p>\n<p>The country drinks about 40 billion litres each year, ranked second in Asia \u2013 just behind Korea. But until recently, most of those 40 billion litres were almost definitively <em>bia hoi, <\/em>Vietnam\u2019s iconic featherweight lager: cheap, easy-going, available on every fluorescent street corner, and with a flavour profile you could count on one finger. Photo C\/O Heart of Darkness.<\/p><\/div>\n<p>The turning point for Vietnamese beer was probably in the early 2000s, when Czech imports began arriving on the streets of Saigon. By 2015, local microbreweries like <a href=\"https:\/\/platinumbia.vn\/\" target=\"_blank\" rel=\"noopener\">Platinum<\/a>, <a href=\"https:\/\/pasteurstreet.com\/\" target=\"_blank\" rel=\"noopener\">Pasteur Street<\/a> and <a href=\"https:\/\/biacraft.com\/\" target=\"_blank\" rel=\"noopener\">BiaCraft<\/a> were experimenting with punchy IPAs and funky sour beers, lead mostly by die-hard American, British or Australian ex-pats. \u201cThis is how it always starts,\u201d says Roberts. \u201cIn Korea and Japan and Hong Kong, the craft beer scene was lead by local ex-pat populations, and for the first couple of years the consumption was just thirsty foreigners, then it began to transition into a local product.\u201d<\/p>\n<p style=\"text-align: center;\"><a data-wpil=\"url\" href=\"\/vietnam\" target=\"_blank\" rel=\"noopener\"><strong>EXPLORE OUR FULL RANGE OF SMALL GROUP ADVENTURES IN VIETNAM NOW<\/strong><\/a><\/p>\n<p>That transition is picking up pace. Today there are dozens of homegrown Vietnamese craft beer brands \u2013 labels like <a href=\"http:\/\/heartofdarknessbrewery.com\/\" target=\"_blank\" rel=\"noopener\">Heart of Darkness<\/a>, <a href=\"https:\/\/www.furbrew.vn\/\" target=\"_blank\" rel=\"noopener\">Furbrew<\/a>, <a href=\"https:\/\/www.facebook.com\/fuzzylogicbrewing\/?__tn__=K-R&amp;eid=ARB7wZqHDlkmy2CZxrCq5Bsj463Yzled-D-6jX-9qrDP0cSqtlMRYfSlNSxzSThN5ro6KScVDWzc33ep&amp;fref=mentions&amp;__xts__%5b0%5d=68.ARDcCVNjx9L07cKGTZXkWFwuttyk5xrjASVmZ0MO_MSS9Aw47Ffib3sCTQHDYAEh08N_cWZir0k1ZGDust7qiRYXfMO5eLbEgvfNC0rGnusvrzA_D8Vvk_7YDp5IaVzqALY416S9V5penoKKdc9-VjGYVIz3HaM1WslQk1j69MkiFioV1Rca88EFc9lbC5afBcER6VSd9ZDc_xcH-La3vRJepw3V79lth3uDPqj0oM97cgCFYN5y-a0cKLdECTPI0-2nusNRspivaTc6BHGzZFkGqnxVJmPiRpYnH5NdmW1zFpNSOVK9SWxb9M4WNIDtv7XEvHoJFlR1xjntMN3tOYU\" target=\"_blank\" rel=\"noopener\">Fuzzy Logic Brewing<\/a> and <a href=\"https:\/\/winkingseal.com\/\" target=\"_blank\" rel=\"noopener\">Winking Seal<\/a> \u2013 and those original microbreweries have morphed into a lucrative, full-blown, nation-wide movement, helped along by eye-watering Vietnamese import levies. \u201cThe Vietnamese tax structure puts local beer at a huge advantage,\u201d Roberts admits. \u201cIt\u2019s actually very hard for American or Australian imports to stay competitive. In some ways they\u2019re priced out of the market.\u201d <em>Bia hoi<\/em> is losing its monopoly inch by inch, and locals are thirsty for something new.<\/p>\n<p>Roberts says, like pretty much everything else in Vietnam, there\u2019s some regional variation to the craft beer scene. Hanoi doesn\u2019t take their beer with ice, but that\u2019s not uncommon in the muggy lowlands of Ho Chi Minh City. And because drinking culture in Vietnam is still closely linked to food, the craft palate shifts as you move further north. \u201cIt\u2019s a totally different culture to America and Australia,\u201d Roberts says. \u201cAustralians and Americans will have dinner and then go out to a bar. But for most Vietnamese, communal eating and drinking go hand-in-hand, it\u2019s something you might stretch over a few hours. Since the war ended, Ho Chi Minh City has been Vietnam\u2019s more progressive, worldly city, driving cultural change; bureaucratic Hanoi tends to lag a few years behind. Which is probably why Vietnam\u2019s craft beer epicentre was downtown Ho Chi Minh City \u2013 it\u2019s taken two or three years, but those hoppy, malty shockwaves have finally reached Hanoi\u2019s Old Quarter. \u201cHo Chi Minh City is more like Shanghai,\u201d Roberts says. \u201cIt\u2019s an international city. Take your pick. Heart of Darkness alone has eleven flagship beers \u2013 including everything from IPAs and cucumber pilsners to meaty Irish stouts \u2013 but Roberts reckons lager is about to make a comeback (\u201cIt\u2019s easy to make a lager, but it\u2019s hard to sell it,\u201d he says. \u201cThink about it. Why would I pay double the cost of Peroni?\u201d).<\/p>\n<p>The real advantage for Vietnamese craft beer is that it\u2019s not carrying a legacy around its neck \u2013 there are no preconceptions about what Vietnamese craft beer <em>should<\/em> be. There\u2019s no history to live up to. And the rest of the world isn\u2019t exactly holding its breath. Labels like Heart of Darkness are free to experiment, safe in the knowledge that they\u2019ll probably beat everyone\u2019s expectations.<\/p>\n<p style=\"text-align: center;\"><a href=\"\/adventures\/haggling-in-vietnam\/\" target=\"_blank\" rel=\"noopener\"><strong>RELATED: WHY YOU SHOULD THINK TWICE ABOUT HAGGLING IN VIETNAM<\/strong><\/a><\/p>\n<p>\u201cBeer is a global commodity now,\u201d Roberts says. \u201cI mean, technically it\u2019s easier for us to get our hands on a passionfruit, but Swedish breweries are pumping out fruit sour beers too. You can make beer anywhere in the world. You just need to know how to make it correctly.\u201d<\/p>\n<h3><strong>Where to drink craft beer in Vietnam<\/strong><\/h3>\n<p><strong>Ho Chi Minh City<\/strong><\/p>\n<p><a href=\"https:\/\/biacraft.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Biacraft<\/strong><\/a> \u2013 Try the Kumquat Ale from Pasteur Street, or Anderson Valley\u2019s Salted Caramel Porter.<\/p>\n<p><a href=\"http:\/\/www.maltsaigon.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Malt<\/strong><\/a> \u2013 A classic Saigon brew bar.
