There\u2019s a certain kind of nerves you get when visiting a stranger\u2019s home. You don\u2019t know what to expect of your host, or their home, and there\u2019s always that fear of accidently causing offence. All of this was at the front of my mind when we knocked on Nuray\u2019s front door in Goreme<\/a>, our little group of nine clustered around the doorstep.\u00a0\u00a0<\/strong><\/p>\n

We\u2019re here for a Cappadocian cooking class, part of a 10-day Turkey Real Food Adventure<\/a> with Intrepid Travel, and while we\u2019re excited to eat our upcoming creations, we\u2019re curious about <\/span>Nuray<\/span> too.\u00a0<\/span>\u00a0<\/span><\/p>\n

The door swings open and there she is: a small-statured woman wearing a bright floral headscarf and a wide smile. She sweeps us inside with a sunny \u2018<\/span>merhaba<\/span><\/i>‘ (\u2018welcome\u2019) and in an instant we\u2019re seated on couches eating <\/span>lokum<\/span><\/i> (<\/span><\/i>Turkish delight) and other treats, admiring the intricate Turkish rugs on the floor, and the cave home her family has been living in for 50 years. On the walls hang black and white photos of the family sitting down to eat <\/span>meze <\/span><\/i>in this very room. Taking pride of place above <\/span>the <\/span>TV, I spy <\/span>Nuray\u2019s<\/span> many awards for both her cooking classes and recipes.\u00a0<\/span>\u00a0<\/span>\u00a0<\/span><\/p>\n

Our leader, <\/span>Atahan<\/span>, tells us <\/span>Nuray<\/span> has been hosting cooking students with Intrepid Travel for eight years and her inclusion on our trip is no happy accident. Intrepid has been working for years<\/span> to balance the gender disparity in Turkey, where women have fewer working opportunities than men. When women <\/span>do <\/span><\/i>find employment, they often receive less pay for the same work. To address this, Intrepid introduced a new initiative purposefully sourcing local, self-employed women to run activities as part of its itineraries.\u00a0<\/span>\u00a0<\/span><\/p>\n

Now she has us settled with sweets, <\/span>Nuray<\/span> says we\u2019ll be helping to prepare a four-course lunch, made up of dishes local to the Cappadocia region.\u00a0<\/span>\u00a0<\/span><\/p>\n

We move from the couch to the kitchen, which is part of a modern extension from the traditional cave home. It\u2019s not long before we\u2019re crowded around the bench, cooking up a storm \u2013 <\/span>slicing<\/span>, peeling, stirring and tasting. Nuray dazzles us with her skills, casually tossing a handful of chopped parsley into the pot, and finely dicing a whole onion in one hand. Yup. In one hand.\u00a0\u00a0<\/span>\u00a0<\/span><\/p>\n

Nuray<\/span> tells us she learned to cook from her mother, and over time she made the family recipes her own by continually refining them. Now, she is passing her recipes on to her two daughters. The secret, she says, is constantly \u2018tasting, tasting, tasting\u2019. That diligence has led to her developing her award-winning baklava<\/span> recipe<\/span>, now published in a local anthology cookbook. The <\/span>trick,<\/span> she confides, is to u<\/span>se <\/span>at least <\/span>40 layers of pastry and <\/span>not<\/span> to <\/span>rest the dough too little or too much. She promises to teach me her recipe if I ever return to Goreme.\u00a0<\/span>\u00a0<\/span><\/p>\n

\"Preparing

Our entree is a lentil soup called <\/span>mercimek<\/span><\/i> \u00e7<\/span><\/i>orbasi<\/span><\/i>, which features <\/span>the<\/span> deliciously fiery pepper paste <\/span>sal<\/span><\/i>\u00e7<\/span><\/i>a<\/span><\/i>. As we peel boiled tomatoes and zucchinis, the casual chit chat <\/span>reveals<\/span> surprising insight<\/span>s<\/span> into Turkish life. In the old days, for instance, a young woman\u2019s suitability to marry would be judged by her ability to cleanly peel a boiled tomato. <\/span>Nuray i<\/span>s<\/span> positively <\/span>beaming when one of our group slides the whole skin from a tomato in a single movement.<\/span>\u00a0<\/span><\/p>\n

\"\"<\/a>With our lentil soup now boiling, we turn our attention to stuffed eggplants (<\/span>karniyarik<\/span><\/i>), which are decorated by peeling tiger stripes on the outside and stuffing them with beef mince and vegetables. <\/span>Nuray<\/span> puts half the group to work rolling <\/span>sarma<\/span><\/i>, vine leaves stuffed with more beef mince and rice. It\u2019s delicate work as I try not to tear the soaked leaves, but it<\/span>\u2019s<\/span> incredibly meditative<\/span>;<\/span> wrapping and folding, wrapping and folding. We use a plastic mat as an aid but <\/span>Nuray<\/span> shows us her mother\u2019s technique, which involves lifting the leaf in the air and deftly wrapping it between her fingers.\u00a0<\/span>\u00a0<\/span><\/p>\n

Finally, we turn to des<\/span>s<\/span>ert, a soft doughy creation called <\/span>aside <\/span><\/i>(ah-seed-eh). <\/span>Nuray<\/span> whips together flour, water and molasses in a pan<\/span>,<\/span> stirring it<\/span> until it\u2019s well combined. Like the foodie embodiment of a great hug from <\/span>nene<\/span><\/i> (\u2018grandmother\u2019), it\u2019s served warm with a walnut and fresh tahini sauce.\u00a0<\/span>\u00a0<\/span>\u00a0<\/span><\/p>\n

With everything prepared, we sit down to enjoy our feast. The rich and vibrant <\/span>flavours<\/span> of Anatolia can be seen and tasted on every plate, and there\u2019s a constant flicker of <\/span>chilli<\/span> in every dish that keeps me going back for more. Getting hands<\/span>–<\/span>on in the kitchen has inspired everyone to talk about their <\/span>favourite<\/span> dishes from home, debating their love or hate for dill, and swapping recipe ideas. A small contingent from Australia vow to have a dinner party when they return home.\u00a0<\/span>\u00a0<\/span><\/p>\n

I\u2019m stuffed as a <\/span>sarma<\/span><\/i> when <\/span>Atahan<\/span> rallies us to leave, and together we roll to <\/span>Nuray\u2019s<\/span> front door for a hug and a kiss as we say farewell. <\/span>As we <\/span>walk down the driveway<\/span>, <\/span>I turn to see Nuray and her daughter waving goodbye from their doorstep. Maybe one day I\u2019ll return and make good on <\/span>Nuray\u2019s<\/span> offer to teach me her legendary baklava.\u00a0<\/span>\u00a0<\/span><\/p>\n
