It\u2019s a pie &#8211; which happens to be my third pie of the day &#8211; golden, glistening, still hissing fresh from the oven. \u201cIt doesn\u2019t really have a name,\u201d says our host Tina. \u201cWe just call it Tina\u2019s tart,\u201d adds her husband Dani, \u201cIt\u2019s a family favourite.\u201d<\/p>\n<p>That pretty much sums up the approach to food here in rural landlocked Macedonia, 25 years\u00a0after the break-up of Yugoslavia in 1991. You forage, you find, you cook, you serve, you enjoy. It\u2019s informal, hearty, filling, made with love, and sometimes it doesn\u2019t really have a name.<\/p>\n<p><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter wp-image-18845 size-full\" src=\"https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-Lake-Ohrid-Intrepid-Travel.jpg\" alt=\"Macedonia food Lake Ohrid Intrepid Travel\" width=\"800\" height=\"450\" srcset=\"https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-Lake-Ohrid-Intrepid-Travel.jpg 800w, https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-Lake-Ohrid-Intrepid-Travel-425x239.jpg 425w, https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-Lake-Ohrid-Intrepid-Travel-768x432.jpg 768w, https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-Lake-Ohrid-Intrepid-Travel-585x329.jpg 585w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p>Tina and Dani run Villa Lazareski, one of a handful of simple, friendly homestays in <a href=\"\/macedonia\">Mavrovo National Park, Macedonia<\/a>\u2019s largest, handily located between the capital Skopje and the pretty lake town of Ohrid. The house itself was built by Dani\u2019s father some 70 years ago and they\u2019re so warm and hospitable, it feels like home. So much so that I feel I\u2019m visiting old friends of my parents who last saw me aged five, a feeling reinforced by the soft rock 80s ballads playing from a stacked hi-fi system reminiscent of the one still in working order at my family home.<\/p>\n<p style=\"text-align: center;\"><a href=\"\/macedonia\/balkans-real-food-adventure-161737\" target=\"_blank\" rel=\"noopener\"><strong>RELATED: CHECK OUT OUR REAL FOOD ADVENTURE IN MACEDONIA<\/strong><\/a><\/p>\n<p>The pie is delicious, crammed with foraged forest greens and <em>bieno<\/em> cheese, an aged \u2018beaten\u2019 cheese made by Marovo farmers. Tina has also prepared baked peppers stuffed with rice, vegetables and meat, homemade bread, traditional Balkan red pepper <em>avjar<\/em> dip, and a <em>shopska<\/em> salad, a Macedonian staple with cucumbers, tomatoes, onion, olives and a salty feta-esque cheese. \u00a0It all goes nicely with the wine; an oaky red Vranec that\u2019s Macedonian too \u2013 in fact, not many know, but this tiny nation is the world\u2019s 25<sup>th<\/sup> largest wine producer.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-18846 size-full\" src=\"https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-mushrooms-Intrepid-Travel.jpg\" alt=\"Macedonia food mushroom Intrepid Travel\" width=\"800\" height=\"450\" srcset=\"https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-mushrooms-Intrepid-Travel.jpg 800w, https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-mushrooms-Intrepid-Travel-425x239.jpg 425w, https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-mushrooms-Intrepid-Travel-768x432.jpg 768w, https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-mushrooms-Intrepid-Travel-585x329.jpg 585w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-18847 size-full\" src=\"https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-homestay-cook-Intrepid-Travel.jpg\" alt=\"Macedonia food homestay cook Intrepid Travel\" width=\"400\" height=\"600\" srcset=\"https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-homestay-cook-Intrepid-Travel.jpg 400w, https:\/\/www.intrepidtravel.com\/adventures\/wp-content\/uploads\/2017\/03\/Macedonia-homestay-cook-Intrepid-Travel-200x300.jpg 200w\" sizes=\"(max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>It\u2019s easy to write off <a href=\"https:\/\/www.intrepidtravel.com\/adventures\/macedonia-food\/\">Macedonian cuisine<\/a> as cheese-, pastry- and meat-heavy, but theirs is a cuisine that\u2019s reliant on agriculture, rich in vegetables too, where the connection between the land and its people is visible on the table. Dessert is Tina\u2019s \u2018no-name cake\u2019, warmly spiced with cinnamon and made with chocolate, berries and raisins. My stomach reaches breaking point, but Dani rescues us with a calming herbal tea of local herbs:\u00a0mountain mint, dandelion flower and thyme.<\/p>\n<p>Alas, only seven hours separate dinner from breakfast. After a blissfully tranquil night\u2019s sleep, I enter their home the next morning where Tina is preparing <em>mekici<\/em>, fried doughnuts, at an old stove, and serving it up with homemade plum marmalade. \u201cIt\u2019s nothing much, something light,\u201d says Dani. I don\u2019t even know if he\u2019s joking. It\u2019s a far cry from my usual breakfast of yogurt with banana, nuts and honey, but compared to the previous night\u2019s feast, it\u2019s a fraction more forgiving.<\/p>\n<p>The term \u2018hyper-local\u2019 gets bandied about a lot when it comes to food, but it really applies here. But while the ingredients are local, what influences the cuisine goes further afield, testament to the different cultures which have settled here. \u201cIt\u2019s a mix of Balkan, European, Middle Eastern and Mediterranean,\u201d says my Intrepid Macedonian guide, Jane (pronounced Ya-ne) Josifovski. When we arrive, Goran hasn\u2019t long returned from a walk in the woods where he collected snails for dinner, served up super-garlicky. I stick to the dandelion flower salad, Gjurgjina\u2019s pie, and a swig of <em>rakia<\/em>, a fruit brandy infused with herbs. The next day, we meet Pece Cvetkovski who grows 80% of his food served at his guesthouse, and meet dedicated beekeeper Naco Jovcevski, the local honey-maker whose honeycomb is sublime.<\/p>\n<p>It\u2019s astonishing and heartening to see so much food produced from scratch in this way. \u201cI\u2019m still discovering new places and dishes in the Macedonian countryside,\u201d says Jane. \u201cMost food is how I remember it growing up, I hope it stays like this.\u201d<\/p>\n<p>I hope so too \u2013 after all, one stomach can only take so much and there are still a lot of dishes I need to try, and at a supermarket stop en route to the airport, I stock up on <em>avjar<\/em> dip, local cheese and a small bottle of <em>rakia<\/em>.
