New Year’s resolutions are like making plans to catch up with an old acquaintance. You bump into them on NYE, smile with too many teeth and say, ‘Oh my god, we should totally do coffee soon. How have we let it get this long? We’ll text. Ciao!’ Then weeks go by and that resolution just sits there gathering dust, rather like those dumbbells you bought two Januaries ago. But Intrepid is here to help. We reckon most resolutions just need a little spice, a twist of lemon or a dollop of chimichurri – and we’ve got just the continent for the job: South America.
When we sat down to create our Intrepid Food Adventures, we had a simple mission in mind: to design the most authentic, affordable and awesome ‘real food’ experiences – the kind you see in beautiful magazine spreads or envy-inspiring food documentaries.

Why wait until the summer for your next holiday? There are countless good reasons to escape in spring – to beat the crowds, enjoy a milder climate and see some gorgeous spring scenes. The trouble is, there’s so much world to choose from, it can be impossible to know where to start. So we thought we’d lend a hand by picking some of our favourite itineraries to undertake in spring. Here’s the top five.
You have to picture Europe as one giant bowl of ratatouille: there’s a bit of everything in there, it’s delicious and surprising, but it can be tricky to know where to begin. Do you pack as many flavours into a two-week trip as possible, or spend 12 days carefully peeling back the layers of a single onion, er, country? It all comes back to time: how much of it you have and where you like to spend it.
After hibernating through a long, dark winter, spring and summer are the seasons in which Europe reanimates. Alfresco diners begin to colonise old cobbled lanes, vineyards burst into life, Spanish grandpas siesta under olive trees and white-sailed yachts start their dance across the blue waters of the Aegean Sea.
